About the Founders

Red Rami

Originally from Albania, Red came to the United States with his family at a young age. Growing up in a household that enjoyed cooking and food he developed a love for culinary arts. Red got his start working in the kitchen but moved into the front of the house when he realized his passion for hospitality. With Jays creativity in the kitchen and Reds genuine hospitality Early Harvest has become what it is today.

Jetmir Vertopi (Chef)

Jay moved from Albania to Detroit Michigan at the age of 14. There, he started working in the kitchen of his cousins restaurant and developed a love for cooking. Jay continued to work in a variety of restaurants from fast casual to fine dining. Jay and his brother moved to Massachusetts together which is where Red and Jay met and realized they shared a common passion for the industry. In 2015 Early Harvest Diner Wakefield was created.

Mark Samson

Mark is a graduate of the Cambridge School of Culinary Arts professional pastry program and a restaurant and franchise lawyer out of Stoneham, MA. His passion for the restaurant business grew while working in several restaurants, testing recipes for a renowned cookbook author and using his law degree to help several other restaurants through business issues. Between creating desert offerings for the Wakefield location and handling some business matters, Mark realized with Red and Jay that they shared the vision to open the second location of Early Harvest Diner in Beverly.
